The awesome Molesworth Station is a fantastic place to explore in a Jimny, as the gravel roads are well maintained, and the altitude gets fairly high.
There are a couple of DOC huts that you could aim for, or lots of places to pitch a tent, but it's all so easily accessible from Hanmer Springs, too. Only an hours drive from Hanmer Springs, you can be right in the depths of Molesworth Station and all it's tremendous ruggedness.
The Huts on Molesworth that are easy to get to are Island Gully Hut and Sedgemere Sleepout.
